Tomato Stuffed with Tuna and Beans

6 medium tomatoes
1 can (8 oz.) white kidney beans or cannellini beans drained and rinsed
1 (8 oz. can) tuna in water
juice of one lemon
1 small sweet onion chopped finely
1 small stalk celery chopped finely
3 tablespoon chopped Italian parsely, leave only
salt and pepper to taste
8 tablespoons olive oil


Drain the tuna and rinse under cold water drain well again. Sprinkle with lemon juice let sit for 10 minutes and rinse and squeeze dry. Don't leave lemon juice on longer it will break down the fish.

Cut tops off tomatoes, squeeze tomatoes gently to remove seeds. Scoop out insides and chop finely and put into bowl. Salt interior of tomatoes and place upside down on paper towels to drain.

Drain beans and run under cold water. Drain on paper towels. Place all ingredients into bowl and mix. Moisten with about 6 tablespoons of olive oil; mix.

Stuff tomatoes with mixture and drizzle remaining olive oil on top of tomatoes. Serve Cold.
