BBQ Beef

1 boneless chuck roast
1 large onion, chopped
1-2 tsp. Ground cloves
2 cups water
BBQ Sauce (recipe follows)


Place onions and water in crockpot; add beef and sprinkle with cloves. Cook on low overnight or all day. Remove beef and allow to cool. Reserve some juices to add to B-B-Q sauce, if desired.

When beef is cool shred into small pieces discarding all fat. It should be so tender it will fall apart. Mix with the bbq sauce and put back into the crockpot to heat throughly.


BBQ Sauce:
1 1/2 TBSP. Bacon drippings
5 TBSP. minced onions (you can omit this if you want to use some of the onion in the roast)
3/4 c. Ketchup
6 TBSP. Cider vinegar
3 TBSP. Brown sugar
1 1/2 tsp. Mustard
3/4 tsp. Salt


Combine ingredients and mix with whisk or put in blender. Makes 1 1/2 cups and keeps forever in the refrigerator. You can use this on chicken, ribs or pork chops.
