Pesto Beef Sandwich in Round

1 1/4 pounds thinly sliced deli roast beef
1 round loaf crusty French or Italian bread
1/3 cup light mayonnaise
3 tablespoons prepared pesto sauce
1 teaspoon fresh lemon juice
1 (7-ounce) jar roasted red peppers, drained well
3 cups mixed baby lettuce and spring greens
1/2 cup crumbled mild Feta or goat cheese
Pepper to taste


Cut bread loaf horizontally in half; remove center of bread, leaving 1 inch thick shell.

In small bowl, combine mayonnaise, pesto sauce and lemon juice; spread mixture on cut surfaces of both halves of bread. Layer roast beef, roasted peppers, salad greens and cheeses on bottom half. Season with pepper if desired. Close with top bread loaf half. Cut in 8 wedges. Serve immediately.

Note; This sandwich can be refrigerated uncut for up to 2 hours. To take with you, place uncut sandwich in airtight container and carry in cooler.
