Spedino (Fried Mozzarella Sandwich)

4 slices dense bread, crusts removed
4 ounces mozzarella cheese, sliced thin, at room until golden on both sides.
Salt and pepper, to taste
1/4 cup milk
2 eggs, beaten in a shallow dish
1/2 cup flour
4 ounces olive oil

Possible additions:
Basil leaves, julienned
Calamata olives, pitted and chopped fine
Sun dried tomatoes (in oil), sliced thin
Capers
Italian parsley, chopped
Olive paste
Anchovy fillets


Sandwich the cheese equally between 2 bread slices (add any of the additions). Season to taste.

Lightly brush the milk on both sides of the sandwich. Dip briefly in flour and remove excess. Place sandwiches in egg and allow egg to soak in. Press edges of sandwiches together to seal.

Heat oil in a large saute pan and add sandwiches. Fry on both sides until golden brown. Remove to paper towels to drain

Yield: 2 sandwiches

Mozzarella on Skewers with Anchovy Sauce

1 loaf unsliced white bread
1 cup mi1k
l lb. mozzarella cheese
3/4 cup flour
2 eggs, beaten
3 Tbl. butter
3 Tbl. olive oil


Cut bread into slices about 3/4 " thick. Trim crusts. Cut cheese same size.

Thread the bread and cheese on six skewers, starting and ending with bread. Use 5 pieces of bread and 4 of cheese for each serving. Start and end with bread, keeping cheese and bread close together.

Roll skewered ingredients in flour, eggs and flour again, coating them well.

Heat butter and oil in skillet, saute the spedino until browned and crisp all sides. Slide off skew.
at table. Prepare sauce while skewers are baking.

Sauce:
6 Tbl. butter
1/2 cup chopped anchovies
2 Tbl. minced parsley


Melt butter in skillet, saute anchovies and parsley 2 minutes. Pour over Spedino and ess
