Toasted Goat Cheese Sandwiches

4 (1/2 inch thick) slices French bread
2 tablespoons goat cheese
1 to 2 tablespoons milk
1 tablespoon small capers
1/4 cup sun-dried tomatoes, packed in oil, drained and finely chopped
1 Tablespoon finely chopped basil


Preheat oven to 350° F. Place French bread on baking sheet.

In small bowl, beat together goat cheese and 1 to 2 tablespoons milk to make a spreadable mixture. Spread cheese mixture on all 4 slices bread.

In bowl, stir together capers, tomatoes and basil. Gently spread mixture over each bread slice.

Toast bread in oven until cheese begins to melt, about 5 minutes. Remove from oven and serve immediately.

Variation: Substitute thinly sliced home grown tomatoes (Italian tomatoes, if available). Put French toast spread with cheese in oven and let cheese melt. Remove from oven and top with a tomato slice. Drizzle with balsamic vinegar and sprinkle with chopped basil.
