posted by Sue Freeman 06-13-98 2:20 PM Chicken Pesto Sandwiches 6 boneless skinless chicken breast halves 1/2 tsp. salt 2 tablespoons chopped fresh or 2 tsp. dried oregano 1 round focaccia bread, 10 inches diameter 1 1/2 cups shredded spinach 1 container refrigerated pesto 6 slices tomato Heat coals or gas grill or broiler. Flatten chicken halves to 1/4 inch thickness betweeen waxed paper or saran wrap. Sprinkle with oregano and salt. Cover and gril, or broil 4 to 6 minutes 10 to 15 minutes turning once until juices run clear and no longer pink in center. Cut bread horizontaly in half, cut into 6 wedges. Layer chicken, spinach, pesto and tomato on bottom wedges. Top off with top wedge.
