Kentucky Hot Brown

Thinly sliced turkey
Thinly sliced ham
Toast, crusts trimmed
Cheese sauce, recipe follows
tomato slices
partially cooked bacon strips
Parmesan cheese
Cheese sauce:
2 tbsp. butter or margarine
1/4 cup flour
2 cups milk
1/2 cup grated sharp cheddar cheese
1/4 cup grated Parmesan cheese
1/4 tsp. salt
1/2 tsp. Worcestershire sauce
Melt butter. Add flour and stir well. Slowly add remaining ingredients and cook, stirring constantly until thick.
Arrange slices of turkey and ham on toast. cover with cheese sauce (while hot). Top with tomato slices, bacon and sprinkle with grated Parmesan.

Cheese sauce:
6 tbsp. melted butter
2 cups milk
1/4 lb. boxed processed American cheese
1/2 tsp. peper
2 heaping tsp. flour
1/2 tsp. salt
Combine all ingredients and cook in a double boiler or heavy skillet until thick.
Place meat on bread. Cover with cheese sauce, tomato and bacon. Place on cookie sheet and broil until heated thoroughly. Serve immediately.
Hot Brown

buttered bread
mushroom caps
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
dash of Tabasco
2 tbsp. sharp Cheddar cheese (or more, as desired)
dash of pepper
dash of paprika
1/2 cup milk
1/2 cup chicken broth
tomato slices, optional
Cook bacon until crisp. Saute mushrooms. Arrange on butter bread slices on a cookie sheet. Toast bread on the bottom.
Place turkey slices and bacon on toasted bread. Top with sauce (recipe follows). Place in oven until brown on top. Garnish with tomatoes and mushrooms, if desired.
Cheese sauce:
Melt 2 tbsp. butter over low heat; stir in 2 tbsp. flour, 1/2 tsp. salt, dash of pepper, dash of paprika, and dash of Tabasco. Stir until smooth. Gradually add milk and broth; cook, stirring constantly until smooth and thickened. Add Cheddar cheese.
Kentucky Hot Brown Sandwich
1/4 cup butter
1/2 cup flour
1/2 tsp. salt
1/8 tsp. white pepper
1 cup chicken or turkey broth
1 cup milk
1/2 cup grated Parmesan cheese
8 large slices turkey
8 slices toasted bread
8 slices tomato
8 cooked bacon strips
parsley to garnish
paprika to taste
Preheat oven to 400° F.
Melt butter; stir in the flour and blend over low heat until smooth. Add the salt and pepper. Gradually add the broth and the milk, stirring constantly, until thick and smooth. Add cheese and simmer 10 minutes.
Place 2 pieces of toast on each of 4 oven proof plates. Cover with turkey slices and sauce. Sprinkle with paprika to taste. Top with tomato slices, and bacon. Bake for 10 minutes at 400. Garnish with parsley.
Hot Brown Sandwich
Sauce #1:
1/3 cup butter
1/2 medium onion
1/3 cup flour
3 cups hot milk
1 tsp. salt
dash of pepper
dash of nutmeg
Mince the onion. Cook in melted butter until lightly browned, about 15 to 20 minutes. Add the flour and blend to a smooth paste. Add milk and seasonings, then cook 25 to 30 minutes, stirring constantly, until the sauce is thick and smooth. Strain.
Sauce # 2:
2 cups of Sauce # 1
2 egg yolks
1/2 cup grated Parmesan cheese
1 tbsp. butter or margarine
4 tbsp. whipped cream
In a double boiler, heat Sauce # 1 and combine with the egg yolks. Stir constantly. Remove from heat when it starts to boil. Add the cheese and butter. Fold in the whipped cream.
To assemble sandwich:
1 baked chicken
12 pieces friend bacon
12 bread slices
sauteed mushrooms
Remove the crusts from the bread and toast the bread. Place toast in a shallow oven proof dish and over with slices of baked chicken and a generous portion of Sauce #2. Bake or boil in a hot oven until sauce is lightly browned. Top with bacon and mushrooms.
6 sanwiches.
Note: the crux of this sandwich is the sauce, which is a combination of two sauce recipes.
