lizzie posted 5-17-09 Couscous, Tomato and Mint 2/3 Cup couscous 2 scallions 4 tomatoes 2 pita breads juice of 1 lemon 4 tbsps chopped fresh mint salt and pepper Put couscous in bowl and cover with boiling water. Leave to one side for 10 minutes. Trim and chop scallions, tomatoes and warm pita bread. Drain couscous and mix with scallions, tomatoes, lemon juice, mint and salt and pepper. Split each pita in half and fill gently.
