East West Flank Steak Wraps
1 beef flank steak, 1 to 1 1/2 lbs.
2 cups packaged coleslaw mix
1/2 cup chopped green onions
4 large tortillas, warmed
1/3 cup honey roasted peanuts
Dressing:
1 cup rice vinegar
2 Tbsp. dark sesame oil
1 Tbsp. honey
Combine dressing and whisk until blended. Place beef steak in plastic bag and add 3/4 cup dressing, turn to coat. Close securely and refrigerate for 15 minutes.
Meanwhile add coleslaw mix, 1/2 cup green onions, 1/8 tsp. salt and dash of pepper to remaining 1/4 cup of dressing in a bowl; toss and set aside.
Remove steak from dressing; discard dressing. Place steak on grid over medium heat. Grill or broil 17 to 21 minutes for medium rare to medium
doneness, turning once. Carve steak into thin slices; season with salt and pepper as desired.
To assemble, layer an equal amount of beef, coleslaw mixture and peanuts down the center of each tortilla. Fold bottom edge of tortilla up over fillng and fpoding right and left sides to center, overlaping edges.
Serves 4
