Parsley (Spinach) Bacon Sandwich Filling
2 bunches fresh spinach, parsley or watercress, finely chopped
1 pound bacon, crisply cooked and crumbled
1/2-1 cup mayonnaise
1 teaspoon garlic powder
1 cup butter, softened
dash Worcestershire sauce
1 loaf sandwich bread
Combine parsley(spinach), bacon, mayonnaise, and Worcestershire to spreading consistency.
Mix butter and garlic powder, trim crust from bread and flatten slightly with a rolling pin. Spread bread with butter mixture and then top with parsley and bacon mixture. Spread top slice of bread with garlic-butter and top bottom half.
Cut into triangles or finger sandwiches.
Yield: 9 dozen finger sandwiches
