Summer Pesto Veggie Sandwich
2 slim baguettes (about15 inches long)
pesto sauce
2 fresh tomatoes, sliced
1 sliced red, orange, or yellow pepper
deli ham--sliced thin
provolone cheese
roasted eggplant (if desired)
Split loaf of bread in half lengthwise. Spread bread with pesto on both sides. Broil for 5 minutes.
Place ham, tomatoes, peppers, eggplant, and provolone cheese on bottom pieces of both loaves of bread.
Put back under broiler until cheese melts. Put tops on bread to make sandwiches. Cut into 4 pieces for sandwiches.
You can vary the ingredients for the sandwiches: Salami, Turkey, Mushrooms, Other roasted veggies, Other cheeses.
