Greek Gyros

2 lbs. ground lamb
2 crushed cloves of garlic
1/4 cup lemon juice
1 tsp. dried mint
1/s tsp. oregano
1 tsp. thyme
1 tsp. ground cumin
1/2 tsp. salt
1/2 tsp. pepper
1/4 cup snipped parsley


Combine lamb, garlic, lemon juice, basil, marjoram, thyme, rosemary, salt, pepper and parsley in a large bowl. Blend well. Make thin patties and fry like a hamburger in heated skillet. Drain off grease.

Some people split the pita bread to make a pocket, some just fold it in half like a taco and others lay in flat on a plate, pile on the meat, fresh sliced tomatoes and thinly sliced raw onion, top the whole thing with Tzatziki sauce and eat it with a knife and fork. Or you can pile the whole lot into a meatloaf tin and bake as you would for meatloaf. It’s easier to carve into thin slices then.
