Tuna Salad Hero
(Low Cholesterol)
1 (7 oz.) can tuna -- drained and flaked
1/2 tsp. oregano leaves -- crushed
1/4 tsp. garlic salt
generous dash of pepper
1/4 cup blender mayonnaise
1 loaf Italian bread
1 small green pepper -- seeded and cut into rings
1 small onion -- thinly sliced
1 sweet roasted red pepper -- cut into wide strips
1 cup shredded lettuce
Combine tuna, oregano, garlic salt and pepper. Mix in mayonnaise.
Cut bread in half lengthwise to within 1/2 inch of one long side. Spread open; scoop out some bread from both halves. Spread bottom half with tuna mixture. Layer on green pepper, onion and red pepper.
Top with lettuce, close and cut into servings.
Makes 4 sandwiches.
