Mexican Bean Burgers

Mexican Bean Burgers
Makes 8 burgers

1 1-pound can black beans, rinsed and drained (or 2 cups of cooked beans)
1 cup cooked brown rice, preferrably warm
1/4 cup very finely minced onion
3 Tablespoons ketchup
1 to 2 teaspoons chili powder
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
salt and pepper to taste


Combine all ingredients in a large bowl. Mash with a fork or potato masher until beans are mashed well and mixture is thoroughly combined. Divide mixture evenly and form into 8 burgers, 1/2 to 3/4 inch thick. Wet your hands slightly, if necessary, to avoid sticking.

Lightly oil a nonstick skillet or griddle or spray with a nonstick cooking spray. Preheat over medium heat. Place burgers in skillet and cook until browned on both sides, turning burgers over several times.
