Barbecue Sauce with Cinnamon

Amount Measure Ingredient -- Preparation Method

1 Tbl. Olive oil
1/2 Onion -- chopped
1/2 Cup Tomato paste
1/2 Cup Apple juice
1 Tbl. Dry mustard
1/8 Tsp. Cinnamon
1/4 Tsp. Black pepper, ground
1/2 Garlic clove -- chopped
1/4 Tsp. Paprika
2 Tbl. Soy sauce
1/4 Cup Vinegar
1 Tbl. Honey


Heat oil in saucepan. Add onions and cook, covered, until they are golden.

Combine tomato paste and apple juice and blend well. Add this and all remaining ingredients, except honey, to the onions. Simmer for 20 minutes. If it gets too thick add a little water. The sauce should be thick at the end of cooking time.

Remove from heat and stir in honey. Blend until smooth in blender or food processor.

Heinz Sweet and Zesty Barbecue Sauce

Honey Bbq Sauce

1 1/2 Cup Onions, finely chopped
2 Tbl. Garlic, finely chopped
1 Can Tomatoes, crushed, 28 oz
1 Can Tomato Paste, 6 oz
1/2 Cup Red Wine Vinegar
1/4 Cup Worcestershire Sauce
1 Tbl. Chili Powder
1 Tbl. Coriander, ground
3 Tb Lemon Juice
1/4 Tsp. Red Pepper Flakes
1 Tbl. Tabasco Sauce
2 Tbl. Oregano fresh or 1 tb dried
2 Tsp. Cumin, ground
2 Bay Leaves
4 Thyme sprig fresh or 1 tsp. -dry
1 Tbl. Black Pepper, freshly ground
4 Tbl. Honey
1 Salt

Servings: 8


Heat the oil in a saucepan and add the onions. Cook, stirring until wilted. Add the garlic, cook briefly and add the remaining ingredients. Bring to a simmer and cook, stirring often, about 30 minutes. Let the sauce cool and use for basting.

Refrigerates well.

Jamaican Barbecue Sauce

2 cups Seafood stock
5 Tbl. Honey
2 Tbl. Tamarind concentrate
2 Tbl. Fresh ginger root, minced
2 Tbl. Jerk seasoning


Combine the ingredients in a saucepan and bring the mixture to a boil over high heat. Reduce the heat and simmer the sauce until it's reduced by one third, approximately 10 minutes. Serve the sauce warm.

It keeps, refrigerated, for several weeks.

* Variation: If you want to pair the sauce with chicken, a delicious combination, substitute chicken stock for the seafood stock. To make the sauce hotter, in true Jamaican fashion, add part of a minced Habanero or Scotch bonnet chile. Proceed cautiously, though, because these are the most blistering chiles known.

Justin Wilsons Cajun Bbq Sauce

1/2 Tbl. Louisiana hot sauce


Place all ingredients in a pot that is big enough to hold them. Bring to a boil. Cook, covered, on low heat for several hours.

Kansas City Barbecue Sauce

1 tbl. Sage
1 1/2 tsp. Cayenne pepper
1 tsp. Tumeric
3 clove Garlic, crushed


Blend all together in a large saucepan and simmer for 1 1/2 hours.

1 Tbl. Garlic powder
1/2 Tsp. Ground cayenne pepper
1/2 Lb. Bacon, minced
2 Cups Pork, beef or chicken stock
1 Cup Honey
5 Tbl. Orange juice (1/2 orange)
2 Tbl. Lemon juice (1/4 lemon)
2 Tbl. Minced garlic
4 Tbl. Unsalted butter
1 1/2 Tsp. Black pepper
1 Tbl. Onion powder
1/2 Tsp. White pepper
1 X ------main ingredients------
1 1/2 Cups Chopped onions
1 1/2 Cups Bottled chili sauce
3/4 Cup Dry roasted pecans, chopped
1 X Rind & pulp from 1/2 orange
1 X Rind & pulp from 1/4 lemon
1 Tbl. Tabasco sauce


Combine the seasoning mix ingredients in a small bowl and set aside.

In a 2-quart saucepan fry the bacon over high heat until crisp. Stir in the onions, cover pan, and continue cooking until onions are dark brown, but not burned, about 8 to 10 minutes, stirring occasionally. Stir in the seasoning mix and cook about 1 minute.

Add the stock, chili sauce, honey, pecans, orange juice,lemon juice, orange and lemon rinds and pulp, garlic, and Tabasco, stir well. Reduce heat to low; continue cooking about 10 minutes, stir frequently. Remove orange and lemon rinds.

Continue cooking and stirring about 15 minutes more to let the flavors marry. Add the butter and stir until melted; remove from heat.

Let cool about 30 minutes, then pour into a food processor or blender and process until pecans and bacon are finely chopped, about 10 to 15 seconds.

This sauce may be used to barbecue chicken, pork or ribs.

Sheila's Backyard Barbecue Sauce

1 med Onion, peeled and slivered
4 Whole cloves garlic, peeled -- and halved
1 cn Peeled plum tomatoes, crushed -- w/ juice (28 oz.)
1 1/2 c Ketchup
1 c Fresh orange juice
6 tb Fresh lemon juice
6 tb Red-wine vinegar
1/2 c Water
1/4 c Honey
1/4 c (packed)dark-brown sugar
3 tb Crystallized ginger, finely -- chopped
2 tb Dark molasses
1 tb Worcestershire sauce
1/4 tsp Tabasco, or more to taste
2 tb Chili powder
1 tb Ground coriander
1 tb Dry mustard
1 t Salt, or more to taste

NOTE: Inspired by sauce at Sonny Bryan's BBQ, as mixed by Charlie Riddle.

Place the oil in a medium-sized heavy pot.

Add the onion and cook for 5 to 7 minutes over medium heat until golden brown.

Stir in the garlic during the last minute.

Add all of the remaining ingredients to the pot and combine well.

Bring to a boil, reduce heat to very low and cook, stirring often, for 45 minutes to an hour,or until the sauce thickens and has a smooth texture.

Remove the onion and garlic with a slotted spoon; discard.

Adjust seasonings to taste.

If the sauce is too thick, add a small amount of water.

Cool to room temperature and refrigerate in covered containers for up to two weeks.

Star Bbq Sauce

Saute for 2 minutes.

Add honey, lemon juice, and tomato paste and season to taste with salt and pepper.

Simmer for 5 minutes.

Makes 1/2 cups sauce.

4 tb Worcestershire sauce
1 tb Lemon-pepper seasoning


Combine all ingredients in a large saucepan.

Heat and stir until ingredients are well-blended and heated through, about 15 minutes.
