British Beer Mustard
1/4 cup whole brown mustard seeds, coarsely ground
1/4 cup mustard powder
4 allspice berries, finely ground
2 tsp. each ground coriander and turmeric
1/2 tsp. celery seeds
1 cup British amber ale or stout (Guinness)
2 cloves garlic, minced
1 tsp. salt
Place all ingredients in blender.
Puree until fairly smooth and thoroughly mixed, frequently scraping sides
of container.
Transfer to clean, dry jar or bowl, cover tightly. Refrigerate 2 weeks before using.
Yield: 1-1/2 cups.
