  Bolognese Sauce

  Amount Measure Ingredient -- Preparation Method

  3 tablespoons butter or margarine 
  1 medium onion -- chopped 
  1 stalk cerery -- chopped 
  1 carrot -- chopped 
  2 cloves garlic -- pressed 
  3/4 pound ground chuck (see note) 
  2 teaspoons dried Italian seasoning 
  1/2 cup dry red wine 
  1 (28 oz.) can crushed tomatoes -- undrained 
  1/2 cup beef broth 
  1 teaspoon sugar 
  1/2 teaspoon salt 
  1/2 teaspoon pepper 


Melt butter in large nonstick skillet over med-high heat. Add onion and next 3 ingredients; saute 5 minutes.

Add chuck and cook until browned, stirring until meat crumbles; drain.

Add tomatoes and remaining ingredients; reduce heat to medium, and simmer 30 minutes.

Makes 6 cups.
