12 oz. Pkg. fresh or frozen cranberries
3/4 cup Brown sugar
1/2 cup Orange juice
1 tsp. Ground cinnamon
1/4 tsp. Salt
1/8 tsp. Pepper
8 oz. Can pineapple tidbits, drain
1/2 cup Walnuts; coarse chop

Fruit (A)

11 oz. Can mandarin oranges
2 Pears; core, chop
1/2 cup Dried apricots; chop
2 Apples; core, chop
1 cup Red and/or green grapes; halve
2 Figs; or 1/2 cup Dried; chop

Nuts (B)
Hazelnuts
Pecans
Pistachios
Brazil nuts
Cashews
Almonds

Spices (C)
Allspice
Cardamom
Ginger
Anise
Nutmeg
Cloves


In medium saucepan over medium heat, cook cranberries, sugar, orange juice, cinnamon salt and pepper, stirring occasionally, 15 minutes or until cranberries pop and mixture thickens.

Remove from heat and stir in pineapple tidbits and walnuts.

1/4 cup: Cal 84; Fat 2 gr; 21% fat.

216 WAYS: Using above recipe, substitute a fruit from Column A for cranberries, a nut from Column B for walnuts and an herb from Column C for cinnamon.
