Orange-Scented Chocolate Sauce

4 Tablespoons unsalted butter or margarine
4 Ounces sweet baking chocolate, broken into pieces
2 Tablespoons orange juice, freshly squeezed
1/2 Teaspoon orange rind, finely grated


Melt butter in heavy saucepan. Add chocolate and stir until smooth. Stir in orange juice and rind, adjusting to taste. Makes 1/2 cup sauce.

Timesaver Tip: Recipe can be prepared up to 5 days ahead and stored, covered, in refrigerator. Gently reheat in a saucepan or in a microwave oven.

Microwave Method: Place butter and chocolate in a small glass bowl. Microwave on 50% power for 1 minute, stir, then microwave 1 to 3 minutes more. Stir in orange juice and rind.

Notes : Serve a pool of this rich sauce topped with fresh fruit such as strawberries, bananas, peaches, or pears. It's also good with ice cream or a rich fruit sorbet (sherbet).

Double recipe and you'll have a terrific chocolate fondue.
