Home-Made Pesto
2 cloves of garlic, crushed
50 g. (2 oz.) fresh basil leaves
100 g. (4 oz.) pine nuts
100 ml. (4 fl oz.) virgin olive oil
50 g. (2 oz.) fresh Parmesan cheese, grated
Salt and black pepper
5 ml. (1 tsp.) lemon juice
45 ml. (3 tbsp.) single cream
350 g. (12 oz.) dried pasta
Serves 4
Place garlic, basil and pine nuts in a food processor and blend until very finely chopped.
Keeping the blender running on a low speed, drizzle in the olive oil.
Stir cheese, seasoning, lemon juice and cream into the sauce.
Toss with cooked pasta and heat through for 2 to 3 minutes.
