Tomato Sauce
2 Tbl. olive oil
1 medium onion (chopped finely)
2 clove garlic (minced)
28 oz. crushed tomatoes
6 oz. tomato paste
1/2 cup dry red wine
1 medium bay leaf
1/2 tsp. each: salt; basil; oregano
1/4 tsp. black pepper
1/4 to 1 tsp. crushed red chiles (optional)
Saute onion in oil until very tender, about 15 minutes; add garlic and
saute until fragrant, about 1 minute. Add tomatoes, paste, water, wine
and seasonings. Simmer until cooked through and flavors meld, 20 to 30
minutes.
Use immediately or freeze.
Makes about 4 cups.
Can be used as a pizza sauce.
Variation: For marinara sauce, omit tomato paste and red wine.
