Spanish Sauce for Omelets

  1 (10 oz.) can enchilada sauce 
  1 (8 oz.) can tomato sauce 
  1 onion cut in 1 inch chunks and layers separated 
  1 green pepper cut in 1 in chunks 
 

Simmer all together till veggies are tender and sauce thickens some. 
The last five minutes you can add peeled, seeded and chunked tomatoes 
if you like.
