Tomato Mustard Sauce

1 tablespoon mustard 
1/2 teaspoon olive oil 
1/4 cup tomato puree 
2 tablespoons Dijon mustard 
2 tablespoons low-fat cottage cheese 
1 1/2 teaspoons skim milk 


In a saucepan, saute onions in oil over medium heat for 3 minutes, or until soft.  Add tomato puree and mustard and continue to cook for 3 minutes, stirring frequently.
 
Place cottage cheese and milk in a blender and puree until smooth. Add to pan, stir, remove from heat and serve.
