Pizza Sauce
Amount Measure Ingredient -- Preparation Method

4 sun-dried tomato halves
1 jar roasted red peppers
1 can plum tomatoes, 28 oz. -- crushed
4 medium garlic cloves -- crushed
3 tablespoons olive oil
1/2 teaspoon citric acid
1/2 teaspoon dried red chile pepper
1/4 teaspoon onion powder
3/4 teaspoon salt, or to taste
1/2 teaspoon sugar
1/4 teaspoon black pepper
2 tablespoons fresh herbs-oregano, basil, savory -- minced
or 2 teaspoons dried
1 tablespoon parsley -- minced


In a small bowl, cover sun-dried tomatoes with boiling water and let stand 5 minutes. Drain. Place tomatoes, peppers, and canned plum tomatoes in food processor and process until smooth.

In medium saucepan over low heat, saute garlic until softened and just begins to color, 2-3 minutes. Stir in tomato mixture and cook about 5 minutes. Stir in remaining ingredients, and adjust salt and pepper to taste.
Cool completely before using.
