Scotch Eggs
  1 pound sausage meat, half beef, half pork 
  1 cup parsley, chopped 
  1/2 tsp sage, rubbed 
  1/2 tsp thyme, ground 
  3 eggs, hard-boiled, peeled 
  3/4 cup flour 
  1/2 tsp salt 
  pepper, freshly ground 
  2 eggs, beaten lightly 
  1 cup bread crumbs, dry 
  oil for frying 
  mustard mayonnaise sauce 
Mix sausage with parsley, sage and thyme.  Shape into 8 flat patties and wrap around the hard boiled eggs, covering each egg completely.  Dredge sausage wrapped egg in flour which has been seasoned with salt and pepper. 
Roll sausage egg in beaten egg and then in bread crumbs, coating completely.  Deep fry in hot oil until golden brown on all sides, about 5 minutes. 
The sausage should be cooked and brown.  Serve hot or cold with mustard mayonnaise sause. 
  Mustard-Mayonnaise Sauce:
  2 cups mayonnaise 
  1/4 cup white chablis 
  2 tsp dry mustard 
  1 1/2 tsp old English-style mustard  
  Salt 
  1/2 tsp Worcestershire sauce 
  1/8 tsp cayenne pepper 
  1 tbs lemon juice, fresh 
Mix all ingredients gently into mayonnaise, stirring lightly to blend. Chill
