Boiled Green Peanuts

6 pounds fresh green peanuts, in the shell
4 tablespoons kosher salt in 4 quarts water


Rinse the peanuts and cook them in salted water, uncovered at a lively simmer, for 1-1/2 to 2 hours.

(They are done when the shells are tender and the nuts have a firm but creamy consistency of a well-cooked pinto bean.)

Taste and if salty enough, drain and eat immediately, or refrigerate and eat chilled later.

If you want your peanuts saltier, leave them in the warm salty water until the desired flavor is reached.
