Graham Crackers

2 1/3 cups whole meal plain flour
1/2 cup corn flour
1/2 teaspoon salt
1/4 cup caster sugar
5 ozs. butter
3/4 cup cream


Sift flours and caster sugar into a bowl. Rub in butter with finger tips until mixture resembles breadcrumbs.
Stir in cream to make a pliable dough. Shape dough into a ball and wrap in plastic film. Chill for 30 minutes.

Preheat oven to 200 degrees C (400 degrees F.) Roll out thinly. With pastry wheel or sharp knife, cut into squares or oblongs. Place onto greased baking trays. Allow room for spreading. Bake for 6 - 7 minutes, or until firm and golden brown. Cool 2 - 3 minutes on trays. Transfer to a wire rack to cool completely.
Store in an airtight container.
