Mixed Fruit and Toffee Corn

8 cups popped popcorn (1/3-1/2 c. unpopped)
1 cup butter or margarine
1 cup sugar
3 tablespoons water
1 tablespoon light corn syrup
1/2 cup broken pecans
1/2 teaspoon vanilla
1 (6oz) pkg mixed dried fruit bits -- (about 1-1/2 cups)


Preheat oven to 300 degrees F.

Remove all unpopped popcorn. Place on a buttered 17x12x2" baking pan. Keep warm in a 300 degree oven while making syrup mixture.

Butter the sides of a heavy 2-qt. saucepan. In the saucepan combine butter, sugar, water, and syrup. Bring to a boil over medium heat and cook for 8-10 minutes, stirring constantly with a wooden spoon to dissolve sugar. Cook and stir over medium heat until thermometer registers 255 degrees, hard-ball stage (10-15 minutes). The mixture should boil at a moderate, steady rate over entire surface. Remove saucepan from heat; remove candy thermometer.

Quickly add pecans and vanilla, stir till combined. Pour over popcorn; toss gently to coat. Bake, uncovered, in a 300 degree oven for 15 minutes. Remove popcorn from oven; stir in fruit bits. Bake, uncovered, for 5 minutes more. Turn popcorn onto a large piece of foil.

Cool completely. Serve immediately or store, tightly covered, in a cool, dry place.

Makes about 22 (1/2 cup) servings
