Chinese Fried Walnuts

4 cups walnut halves
1/2 cup sugar
vegetable oil
1/8 tsp. salt


Heat 6 cups water to boiling in large saucepan over high heat. Add walnuts, bring again to boiling, and cook for one minute. Rinse under hot water; drain.

In large bowl toss walnuts in sugar.

Using a deep skillet heat about one-inch of oil to 350 degrees. Add half the walnuts (use a slotted spoon) and fry about five minutes, or until nuts are golden, stirring often. Remove from oil and place in coarse sieve over a bowl to drain. Sprinkle lightly with salt and toss to keep nuts from sticking together.

Transfer to waxed paper to cool. Repeat with second batch.

Store in tightly covered container.
