Coated Pecans:
2 cups pecans
1 cup sugar
1/3 cup water
1tsp. vanilla
1 tsp. cinnamon
Preheat oven to 300° F.
Roast pecans 10 minutes .
In a large saucepan combine remaining ingredients; cook to 230-234 degrees on candy thermometer, or spunthread stage; do not stir.
Add pecans ,vanilla and cinnamon.
Stir until glazed.
Pour out on foil.
Cool and separate pecans.
Glazed Pecans:
1 lb. pecans
2 egg whites
1 cup sugar
dash of salt
1 1/4 sticks butter
Beat whites, sugar and salt till firm.
Fold in pecans.
Melt butter in shallow pan.
Spread pecans in pan; bake at 325o for 30 minutes.
When done drain on paper towel.
