Pecans Bertolli
6 cups pecan halves (one 4-ounce can is 1 cup)
1 1/2 cups sugar
1/2 cup orange juice
1/2 cup water
1/4 cup olive oil
1/2 teaspoon ground cinnamon
Combine all ingredients in a large skillet. Cook over medium heat, stirring often, until liquid disappears and nuts have a glazed appearance.
Pour onto a greased sheet pan. Using 2 forks, quickly separate and spread out nuts. Let cool completely.
Store in a tightly covered container in the refrigerator or freezer. They will keep weeks in the refrigerator or months in the freezer.
