Microwave Caramel Corn
10 cups freshly popped popcorn
1/3 cup butter
2/3 cup brown sugar
1/3 cup corn syrup
1/4 teaspoon baking soda
1/2 teaspoon vanilla
Grease a cookie sheet and set aside.
In a microwave safe bowl, melt butter. Stir in brown sugar and corn syrup. Microwave on high until boils. Boil 2-3 minutes, stirring once. Microwave 2 minutes without stirring. Stir in vanilla and baking soda. Stir in popcorn, mixing well. Microwave med-high 1 minute. Stir. Cook 1 more minute on med- high. Remove from microwave. Stir to coat evenly. Cool completely on a cookie sheet. Break apart, and store in a airtight container.
Note: Some microwaves are hotter than others so the time may vary on different microwaves.
