Nutty Caramel Corn
12 cups popped popcorn
1 1/2 cups almonds, cashew or peanuts, or nuts of your choice
1 cup brown sugar, packed
3/4 cup butter
1/2 cup dark corn syrup
1/2 tsp. sifted baking soda
Preheat oven to 300° F.
Spray a large roaster pan with spray cooking oil.
Place popcorn and nuts in pan and place in a warm 300 oven.
In 2 qt. sauce combine brown sugar, butter and corn syrup.
Over medium heat melt and bring this caramel mixture to a boil, stirring constantly. After it comes to a boil cook and stir for 5 minutes.
Remove from heat and stir in baking soda.
Pour caramel over warm popcorn/nut mixture. Stir gently to coat.
Bake at 300 for 15 minutes. Stir. Cook 5 minutes more.
Spread on foil to cool.
