Oven Caramel Corn
2 bags of microwave popcorn, popped earlier in the day and let it cool
1 stick butter
1 cup brown sugar
1/2 cup corn syrup
1 cup white chocolate chips
1 cup craisins (or other dried fruit)
Mix butter, brown sugar and corn syrup in a pot over low heat and mix and cook until the mixture starts bubbling around the sides. Then cook it for 5 minutes more and turn it off.
Pour the mixture over the popcorn and mix it well to coat all the popcorn. Mix in white chocolate chips and Craisins. Mix it well and put it on ungreased cookie sheets.
Bake at 200 degrees F for 1 hour, mixing it every 15 minutes. Remove and put each tray of caramel corn on a piece of wax paper (or foil). Let cool and then store how you wish.
