Spicy Bourbon Pecans

1 lb. pecan halves
1/2 cup bourbon
1/2 cup sugar
1/2 cup angostura bitters
1 Tbl. Worcersteshire sauce
1 Tbl. corn oil
1/2 tsp. cayenne pepper
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1 tsp. cumin


Preheat oven to 325 degrees F.

Fill saucepan with water and bring to a boil. Drop pecans in and cook for 1 minute; drain and set aside.

Pour bourbon into small saucepan and bring to a boil. Boil steadily until 3 Tbl. remain.

Combine bourbon and sugar. Add bitters, Worcesteshire sauce and corn oil; stir in pecans. Mix throughly. Let nuts sit for 10 minutes.

Spread on jelly roll pan. Bake in 325 oven for 35 minutes, or until liquid is absorbed. Toss pecans with cayenne, salt, pepper and cumin; mix well. Return to baking sheet and let stand until cool and dry.

Store in tightly covered container for up to several days.
