San Antonio Bean Soup
1 pound dried beans, your favorite
Hambone
2 quarts water
Salt, pepper and garlic powder to taste
1 medium onion, coarsely chopped
2 stalks celery, chopped
2 carrots, chopped
1 small bell pepper, chopped
2 cups diced ham
Soak beans overnight. In the morning, drain water and put beans in a large soup pot. Add ham bone, 2 quarts water and seasonings. Simmer 2 to 3 hours. Add vegetables and ham and more water if needed. Simmer until vegetables are tender.
