1 1/2 pounds lean ground beef
1 large onion, chopped
2 cloves garlic, minced
3 (14.5 oz.) can diced tomatoes, undrained
1 (16 oz.) can hominy, undrained
1 (16 oz.) can pinto beans, undrained
1 (4 oz.) can chopped green chilies
1 envelope taco seasoning mix
1 envelope ranch-style dressing mix
1 1/2 cups water, or more as needed
1 tablespoon chipotle chile canned in adobo, minced-optional
salt and pepper to taste


Brown ground beef with onion and garlic in large Dutch oven or soup pot. Drain fat. Return to pot and add the remaining ingredients.

Bring to a boil, reduce heat and simmer about 30 minutes. Can also be done in slow cooker.

Serve with corn muffins, corn chips or tortilla chips (good for dipping).
