Beef: Sweet and Sour Cabbage Soup

Sweet and Sour Cabbage Soup
served at Scott's Prime Rib restaurant in East Hazel Crest, Illinois.

2 quarts of water
1 c. diced cooked roast beef
1 c. chopped onions
1 c. chopped tomato (or 1 can of drained chunky tomtoes)
1 c. shredded cabbage
1/2 c. sliced celery
1/3 c. chopped carrots
1 c. sugar
1/2 c. cider vinegar
1/4 c. red wine
2 T. browning sauce (Kitchen Bouquet)
2 T. Worcestershire sauce
1 T. tomato sauce
6 beef bouillon cubes or granules (6 tsp)
1 tsp garlic powder
salt and pepper to taste
1/4 tsp dried thyme
2 T. flour
2 T. vegetable oil


In a Dutch oven, combine all ingredients except flour and oil. Bring to a boil over medium heat. Reduce heat, simmer uncovered until veggies are tender. Combine flour and oil and stir into soup. Simmer until thickened. Makes 8 to 10 servings or 3 quarts.
