Cabbage Soup
1 large onion, diced
1 carrot, diced
3 ribs of celery sliced
4 Tbs. butter or margarine
5 cups of broth, vegetable or beef
1 (28 oz.) can crushed tomatoes, undrained
2 medium potatoes, peeled and diced
4 cups of cabbage, shredded
Saute the onion, carrot and celery in the butter until tender. Add broth, tomatoes (including juice) and potatoes. Cover and simmer for 35 minutes.
Add cabbage and cook 5-10 minutes. Season to taste with salt and pepper.
