Cream of Cauliflower Soup
4 T. Olive Oil
2 T. butter
2 Leeks, chopped
1 lg. onion, chopped
1 C. chopped celery
3 cloves garlic, minced or pressed
1 C. grated carrot
1 large head of Cauliflower cut into flowerettes
8 C. chicken broth
1 C. heavy cream
1 1/2 C. Gruyere or cheddar cheese
Melt butter and oil in heavy large pot. Add onions, leeks and garlic and saute until golden (be sure these are golden). Add celery, carrots and cauliflower and saute for 3-5 minutes. Add broth and bring to a boil.
Reduce heat, cover and simmer for 15-20 minutes. Cool slightly and blend until smooth. Return soup to pot and simmer. Add cream and cheese. Garnish with croutons and chives or chopped cilantro.
