Cheddar Veggie Chowder

Vegetable oil
1/2 cup finely chopped onion
1/3 cup finely chopped carrot
1/3 cup finely chopped celery
1/2 cup (1/4 inch dice) red bell pepper
1 medium boiling potato, 1/4 inch dice
2 tsp. flour (all purpose)
1 1/2 cup chicken stock (unsalted)
1/2 cup dry white wine
3/4 tsp. Worcestershire sauce
1/2 tsp, cayenne pepper (optional)
1 1/2 cup broccoli florets (small ones)
1/4 to 1/4 lb. extra sharp cheddar cheese


Heat oil in saucepan over moderate heat until almost smoking. Add onion, carrot, celery, bell pepper and potato. Cook until onion is soft, about 3 to 5 minutes.

Add flour and cook over medium heat, stirring for 3 minutes. Add chicken stock, wine, Wocestershire, cayenne, broccoli and simmer, covered for 10 to 15 minutes and broccoli and potatoes are tender.

Remove from heat and add cheese stirring a little at a time until melted. Season to taste with salt and pepper.
