Hot Pepper Cheese Soup

1 1/2 sitcks butter, divided
1/4 cup flour
1 medium onion, finely diced
5- ounces hot pepper cheese
5- ounces white American cheese
2 cups chicken stock
2 cups low fat milk


Melt 3/4 stick buter in saucepan, stir in flour to make a roux. Cook, stirring , over low heat and set aside.

Saute diced onion in 3/4 stick butter for 3 minutes, add stock and bring to boil. Add cheese slowly, stir and cook on medium heat until cheese is melted and smooth.

Add milk slowly to cheese mixture and retun to boil. Reduce heat and add roux to chicken stock stirring constantly till smooth.

Garnish soup bowls with red bell pepper strips and chopped parsley if desired.

Makes 1 quart.
