Chicken Vegetable Soup (crockpot)
6 large potatoes peeled and cut up to bite size
6 medium carrots peeled and cut to bite size
1/4 cup chopped onion
1-2 pounds boneless skinless chicken cut in bite size pieces
3 cups hot water
1 1/2 cups chicken broth (or one chicken flavoured bouillon cube dissolved in water)
1 1/2 teaspoon salt
1/4 tsp. pepper
1/2 tsp. thyme
While you are cutting up chicken and veggies have your crock pot heating on low heat.
Layer potatoes, carrots and onions in the cooker.
Lay the chicken on top of the vegetables.
Stir the next five ingredients in a bowl and then pour it over the chicken.
Cover and cook on low heat for 9 to 10 hours.
