Chicken and Pasta Chowder

Amount Measure Ingredient -- Preparation Method

3 boned and skinned chicken breast halves -- cut in 1" pieces 
1 medium onion -- chopped 
2 cloves garlic -- minced 
2 (14-1/2 oz.) cans ready to serve chicken or vegetable broth 
1 tsp. dried basil 
1/2 tsp. salt 
2 1/2 oz. (3/4 cup) uncooked rotini (spiral) pasta 
1 (1 lb.) pkg. frozen mixed vegetables 
4 cups skim milk, divided 
1/2 cup flour 
1/2 medium red bell pepper 
1/4 cup Parmesan cheese 


Spray Dutch oven with cooking spray.  Cook chicken, onion and garlic 4-6 minutes.  Stir in broth and add rotini, cool over medium heat 8 minutes.

Thaw frozen vegetabls and drain. 

Combine 1 cup milk and flour, blending well.
 
Stir vegetables, milk mixture, remaining 3 cups milk and bell pepper into rotini mixture.  Bring just to a boil stirring.  Reduce heat to medium, cook 3-5 minutes or until thickened and vegetables and pasta are tender.

Ladle into bowls and sprinkle with Parmesan
