Chilled Asparagus Soup 

3/4 pound asparagus, cut up, or 1 (8 oz) package frozen cut asparagus
1 thin slice onion 
1/2 cup boiling water 
1 cup milk 
1/2 cup light cream 
1/2 tsp salt 
dash of pepper 


In a covered pan cook fresh or frozen asparagus and the onion slice in 
the boiling water till crisp-tender; do not drain.  Cool slightly. 

In blender container combine the undrained asparagus and onion, milk, 
light cream, salt and pepper.  Cover and blend until smooth, 15-20 seconds.

Chill for 3-4 hours ( chill in blender container, if desired). 

Stir or blend before serving.

Makes 4-6 servings.
