Southwestern Gazpacho

Southwestern Gazpacho
from Target The Family Magazine

1 large clove garlic, peeled
1 slice day old firm white bread, torn into pieces
1/4 cup olive oil
1 pound fresh, ripe tomatoes, quartered and cored
1 large red bell pepper, cored, seeded and roughly chopped
4 scallions, trimmed and roughly chopped
1 medium cucumber, halved lengthwise, seeds discarded and coarsely chopped
1/4 cup dry red wine
2 tablespoons freshly squeezed lime juice
1 tsp. salt
1/4 tsp. hot sauce ( such as tabasco)
1/4 tsp. ground red pepper ( cayenne)
1 pickled jalapeno pepper, very finely minced, optional
2 cups vegetable juice ( such as V-8) or tomato juice
2 cups chicken broth


In a food processor or blender, add garlic and process until chopped. Add bread and process until crumbly.

Add olive oil, tomatoes, pepper, scallions, cucumber, wine, lime juice, salt,hot sauce, red pepper, wine and jalapeno pepper. Process until smooth.

Add vegetable juice and broth and process until smooth. Taste adding more lime juice, hot sauce, or salt as desired. Mixture should be rather spicy. Chill.

Before serving, taste again for seasoning. Ladle into mugs or bowls and garnish with any or all of the suggested toppings.

Serves 6.
