Cantaloupe Soup

1 large ripe cantaloupe, peeled, seeded and large diced (use a melon baller and make some balls for garnish and set aside.)
1 large ripe honeydew melon, peeled, seeded and large diced (use melon baller and make some balls for garnish and set aside)
juice and zest of two oranges
juice and zest of two limes
1/2 tsp salt divided
cilantro or mint for garnish
Starfruit to garnish
Raspberry Sorbet, use a scoop and make balls size of 3 inches in diameter
Fresh Raspberries


In a food processor, place cantaloupe, half the juice of both orange and lime and zest of one orange. Puree until smooth. Stir in zest of one lime and and 1/4 tsp salt. Pour into shallow container and place in freezer and stir every half hour until chilled and thick.

Place honeydew, juice of one orange and one lime and zest of lime into the food processor. Process until smooth. Stir in orange zest and 1/4 tsp salt. Put into shallow container and freeze until thick and chilled.

To serve, place two or three scoops of raspberry sorbet in center of bowl. Place cantaloupe soup on one side and honeydew soup on the other side. Garnish with small melon balls, star fruit, berries and mint or cilantro.
