Pasta: Low-Fat Noodle Soup

Low-Fat Noodle Soup

1 package of non fat or low fat ramen noodles
1 can of chicken broth
dash of soy
hot sauce to taste
ground black pepper
tiny dash of cinnamon,
level tsp of grated lime peel
slice of fresh ginger
smashed but not minced garlic clove
half an onion diced
shrimp or chicken
cilantro
scallion
juice from half a lime


Saute the onion in just a little oil. Add the broth and seasonings. Bring to just below the boil and turn off and let steep for about 15 minutes to half an hour.

Fish out the garlic and the ginger. Bring to a boil and add the noodles. When the noodles are nearly done, add the chicken or shrimp or both. You just want to cook them through and then take off the stove before they get tough. Top with some tiny slices of scallion and chopped cilantro. Squeeze the lime juice over the top and serve.

Easy to double or triple the recipe.
