Roast Pork and Spinach Soup with Pasta
1 1/2 tbsp olive oil
3 garlic cloves, minced
6 cups chicken or turkey broth (may use canned)
1 tbsp fresh oregano or 1 tsp dried
1/2 c small elbow macaroni, cooked
3 cups thinly sliced fresh spinach
1 1/2 cups sliced cooked pork
8 tbsp grated Parmesan cheese
Heat olive oil in saucepan medium-low. Add garlic and stir until beginning to colour, about 2 minutes. Add broth and oregano. Increase to high, add pasta and heat through. Add spinach and cook until tender, about 5 minutes longer. Add pork and 3 tbsp Parmesan cheese. Simmer 1 minute. Ladle soup into deep bowls. Sprinkle with remaining Parmesan.
Makes 4-5 servings.
