Minnesota Wild Rice Soup

3/4 cup wild rice, uncooked
1 Tbl. veg oil
4 cups water
1/2 tsp. salt
1 medium onion, chpd
2 ribs celery, chopped
2 small carrots, chopped
1/2 cup margarine
1/2 cup flour
3 cups chicken broth
2 cups half and half
3/4 cup diced cooked ham
1/4 tsp. dried rosemary
salt and pepper as needed


Rinse rice in cold water, drain well. Saute rice in oil. Add water and salt, cook until rice is almost done, about 30 minutes. Drain, reserving liquid.

In large kettle, saute onion celery and carots in butter until carrots loose their crispness. Reduce heat, blend in flour and cook about 5 minutes; stir but do not brown.

Using a whisk, blend in broth and about 2 cups reserved liquid from rice. Cook until slightly thickened.

Add half and half blending well. Add rice, ham and rosemary. Simmer 20 minutes and serve.
